Two weeks in a row... Taco Monday...

Love tacos anyway, anytime, but I have never made steaks at home as more then half the family does not eat beef. However, last Monday I picked up a flat iron steak, marinated it and grilled it up for tacos. I had such a craving for them again that I went and picked up a flank steak. Marinated it and onto the hotside.

It was very very good.

After dinner, I took some coals from the SnS in my Master Touch and moved them over to my One Touch Gold to make tomorrow's dinner.

So when I went to Walmart today, you know to get some steak to make tacos, they had pork shoulders for $1.50 per pound. I haven't seen that good of a price in a long time, so I picked up two! Pulled pork tomorrow and smoked Carnitas this weekend!!!!!

My oldest is a sophomore in high school and in the middle of when she is in health class (her least favorite class), I will start to get emails (I can't carry my phone at work) asking if we can have this or that for dinner, it's always a good day when I can meet her request.
 
Looks great and you just reminded me I have a pork butt sitting in the freezer I need to do because I'm all out of pulled pork. Got to get the Camp Chef out of winter hibernation.
 
Weekday pulled pork was awesome.
I pulled it off the smoker right before I went to work, I mean perfect timing. It spend the day in the cooler wrapped in towels. Here is it pulled and plated.

I am significantly impressed at setting a butt on a kettle for an weeknight overnight smoke. serious skills there
 
Well....Monday is but a few hours away, what's on the menu Michael?
No Monday night tacos tonight. I just made Smoked Carnitas yesterday, which were amazing and a family favorite. Tonight is just simple grilled SPG chicken breast and veggie wraps.

Thanks for that, I have to give credit to my late father-in-law's kettle. Every since I got his old kettle fixed up and running, and equipped it with the Aura Kettle Zone Cooking System, it locks in between 235 and 245 with very little effort for hours and hours. I moved those coals over at 7 pm and pulled the shoulder off at 5 am and it was seriously almost perfect!!! It makes me feel like he is there keeping the perfect temps.
