The 14.5 WSM is smoking....

Finally got to break in the 14.5 wsm this Sunday. Smoked some beef short ribs and rubbed them with meat church rubs. Used pecan and hickory.

Enjoyed a few drinks while watching some football.









Took around 5 hours until probe tender.







Plated with Bush's ranchero beans. This was some good eats.

For all the 14.5 WSM owners. What's the longest cook time you got out of the wsm ?I let it ride and got 8 hours from it.
 
Nice first cruise with the 14.5, ribs look great! You're going to be shocked on how efficient that little guy is.

That there is the money shot! Perfectly smoked beef rib! Nice Smoke!

I can't say for a 14 WSM, but I can get 12-14 hours out of my Mini-WSM running briquettes and holding the temp at 265°, probably could get a bit longer with perfect conditions and keeping the pit temp down around 225°. I'd assume that the 14 would be about the same.
 
Great looking ribs! That cross section has it all! Bark, smokering, juiciness, gorgeous texture, little bit of melting fat! Well done.
 
Great test run Tony! I can only imagine the beautiful meals you are going to be kickin' outta this little guy.
