You knocked it out of the Coliseum, Enrico!!! So you're back to the foil? I had a rough go yesterday with my ribs, I did the parchment paper yesterday but I don't think that was the problem, I just had too much heat. Amazing ribs Enrico!!!

ChuckO, i forgot how the taste. So I was back to alu foil.
Today I'll prepare 1 slab in BP and 1 slab in FOIL.
Ill keep you updated.
 
Great video Enrico! Ribs look amazing! I was hoping that was your band playing in the background! Great choice of sound too!
 
Great looking racks, Enrico. Those sliced pics really show how tender they finished. That cherry wood really adds serious smoke color!

They may have been "overcooked" but not to my eyes! I think that they looked terrific!

You can always make a minor correction the next time...
