Sous Vide Beef Ribs

I got this 7 bone rack a few months ago. Got it home and immediately seasoned with a combo of Montreal Steak seasoning and Stubb's BBQ rub. Then vac sealed and into the freezer. I put it in sous vide yesterday morning - total of 31 hours at 150F. I finished on the Performer at ~275 - indirect with RO lump and some cherry wood for smoke. Total time on the grill was about 30 minutes. I hit the rack with some leftover No 5 sauce about 10 minutes before I took it off the heat. It was delicious and decadent. And my boys - neither of whom are big fans of steak - loved it.

How did you come up with the total of 31 hours at 150°?

Yeah, I've done plate ribs this way a few times, Jim, and they are killer! Really nice finish on those with the #5! If I thought I could find a rack of plate ribs anywhere, I'd do that one again pronto!

How was the texture of the beef? I did a 24 soak of an eye round roast this past weekend and it came out too tender.
