Smoked Pork Chops

I've had a recipe for smoked pork chops from Malcom Reed that I've been wanting to try. When in town last week we went to our butcher shop and had them cut a couple of bone in chops about an inch thick. Got to them last night. To go along with the chops I did some Yukon's and some grilled butternut squash. The squash recipe I snagged off JimK's Chicken post a couple of weeks ago. Here's the pic's.

Let the chops warm up.



Brined the chops for two hours. Apple juice, brown sugar, K Salt and BBQ Rub.



Got working on the squash.



Tossed the squash in oil and added thinly sliced Shallots, minced garlic (4 monster cloves) and a little salt and pepper.



Just a bloody beer night. Nothing fancy.



Got the potatoes oiled up.



Rubbed the chops with Malcom's BBQ Rub and Montreal Steak Seasoning (light coat of this).



Got the 14" WSM up to 250. Minion with a small chunk of cherry wood.



Chops on.

Yukons on for an hour, indirect.



Squash on for about 40 minutes.



Chops done. Took a nice hunk of bark off that top chop with the tongs. Way to go.



Resting.



Squash done.



Potatoes done.



Plated.



Slice.



This was very good. The chops cooked way faster than I planned and the IT got a little higher than I wanted. My fault. They were still juicy with a nice smoke flavor. Definitely do it again. The potatoes were excellent, nice and buttery. My wife just loved them. JimK's squash recipe was fantastic. Thanks Jim! Thanks for looking everyone.

Those chops look beautiful, both before and after cooking. Taters look perfect and you nailed the squash. Glad you liked it. It's one of those recipes that's so simple its perfect. Thanks to Allrecipes.com, I found that one. I need to do the next run on the grill.

I saw that recipe when I was cruising recipes. You must have added the Shallots. Thanks Jim.
 
Cliff, nice looking food there. Smoked PC are the business.

FWIW. (I'm by far no expert). I've done these before, & have found that although juicy they were a tad over-done. Having the chops cut a bit thicker helps.
 
Cliff, how could you defile a perfectly fine PBR glass with Bud Light? Great looking chops though. :-).
 
Little late to the party, but I think those have to be the nicest looking chops I've ever seen. Well done Cliff!
