Skirt Steak, Skillet Potatoes and Bundled Beans

I followed Rich G's advice from his post last week and gave the Coffee Marinated Skirt Steak a try. I wasn't sorry. Sided it up with Garlic Parmesan Skillet Potatoes and some fresh Green Bean Bundles. Came out pretty good. My only misstep was getting my meat at a local discount chain, maybe one tiny notch above Walmart. Enough whining. Here goes.

Got the skirt in the Coffee based brine around 8:30 in the morning. Used one cup espresso.

Here's the Bundles. Fresh green beans tossed in oil, garlic powder, bundled with bacon and glazed with brown sugar slurry.

Prepped the potatoes. Used small red's seasoned with garlic powder, onion powder, paprika, Italian seasoning, s & p and grated Parmesan.

Potatoes on the grill first.

Then the bundles.

Finally, the meat.

Plated. I screwed up and forgot to mark the grain. I guess that's two missteps! After pulling from the grill had difficulty seeing it and kind of guessed. Instead of a 90 degree cut across grain, it was more like 45 degree cut. Oh well, serves me right.

Agree with Rich, this Coffee based marinade is outstanding. Without a doubt the most flavor packed marinade I've ever done. My wife agreed. I mentioned the meat at the beginning. Had a lot of gristle and had to pick that out. The meat was very tender in spite of my slicing gaffe. Both sides were delicious. The potatoes were crispy on the outside and creamy in the middle. The brown sugar glaze on the beans made them pop as well. Overall, i was happy with the cook. Hope you're all having a great weekend. Thanks for looking!
 
I can't believe I'm saying this, but you had me at green beans. The rest looks fantastic as well.
 
Glad you gave this a go, and it turned out so well, Cliff! That marinade is definitely a keeper as it packs more of a flavor punch than most marinades!

Great spring and bloom on your batard! The crumb looks just perfect to soak up some gravy, or just a slather of butter!

Where's this recipe? My wife and I were at the store today and she asked me what you do with a skirt steak. I have no clue.
 
Amazing cook and plate Cliff. Wish I could get my breads that good, but suffer from high altitude, kind of hit and miss up here.
 
That's a super cook & and beautiful dinner. You are setting the bar pretty high these days, Cliff.

Cliff said above that he used espresso. I used a cup of my cold brew that I make from one of the Peet's blends. I think it doesn't matter too much as long as it's somewhat bold.

I wouldn't know, Rusty, won't drink what they call coffee at either of those places!! Yes, I'm a bit of a coffee snob (still roast my own beans on occasion.) :)

Thanks Rich. Got caught in the crossfire did ya! Peet's Major Dickinson is our daily morning coffee. Just had the espresso handy. Thought you were on vacation? You Smart-phoning it?
