Monday I finally got to cook some BBQ. Spare ribs trimmed and seasoned with simply marvelous cherry rub.
Ribs were allowed to sweat before going into the smoker.

WSM temp was 250
Used cherry wood
This ribs were cooked fast. I don't go by time I go by what the ribs tell me. This ribs were done at 4 hours. I was surprised.
I smoked for about 2.5 hours then wrapped for about 1 hour and then 30 min no foil. Used butter and honey in the wrap. Splash of water.
Sauce used was BB kings. Maribel got this for me when she had dinner at the restaurant in Memphis.


Made my BBQ beans with the smoked rib tips.
