Had a rack of BBs defrosted and seasoned and ready to go. But of course it was raining on and off and very windy.
I had such great luck with my first HH BBs I decided to use the performer and go HH due to the weather.

Started with a full chimney of KBB and a chunk of Maple
The performer was struggling in the wind and my dome temp only hit about 375 or so. I increased my previous times from 20 minutes before the flip and then another 20 to 30/30 minutes then foiled for 30 minutes. Out of the foil indirect for 20 then sauced for 15 more. No direct this time.
Just a little over two hours.

They came out really great, I really like the texture and the moistness of the ribs.
Barb made up a pasta salad and some left over homemade baked beans.
Great Sunday meal

Yeah me too Jim, works so well it's amazing. Wonder how a HH would work on some SL spares, might give that a try.
 
Rich, looks great! I like the thought of ribs in under 2 hours for those days where you just can't plan a 6 hour cook (my usual with spares), or you get the hankering for ribs later in the day! :)

I'll give these a try for sure!
