Saturday Tri tip

I cooked a tri-tip and some stuffed jalapenos for saturday's aggie game.


Trimmed the fat cap.


Some salt and pepper.


Cooked at about 250 to internal temp of about 125.


I fired up the OTG for a quick sear.


After the sear.




Sliced.



 
That's a great looking Tri-Tip. You did good!

Pictures can be deceiving but that looks perfectly cooked.

What kind of smoke did you use?

I saw a big pack of tri-tips at restaurant depot but I had no room in my freezer.

Thanks! Now that my wife had the baby I don't have to overcook all my meat! Don't tell anyone, but I was out of oak chunks and used pecan.
