Ribs and Cowboy Beans

I've been experimenting with cooking at a bit higher temps on my ribs. This evening I did 350*F and they were done in about 3 hrs. Very tender, a nice "crusty" bark. I used Pecan wood for the smoke and it was a definite plus. I also did some "Cowboy Beans" over the fire to serve along side. My G Son rolled out half the pizza dough from earlier and we brushed them with butter, salt and garlic powder. Topped them off with some Parmesan. Overall - a great meal.

Perfect ribs and beans, Dwayne. You can see the "crusty" bark you mentioned on the bottom of your plated ribs.

Wow 350 huh? They look great. Is there much difference than low and slow? It looks fantastic.

The only difference was time. SWMBO and the G kids loved them. I actually got the idea from a Jamie Purviance recipe. He's a Culinary Institute of America grad and gets paid to write a bunch of grilling cookbooks for Weber so I figure he knows what he's talking about.

That came from the book "Grill This Not That". It's a cookbook that teaches a no diet way to eat the foods we love but loose weight doing it. The beans were awesome but I recommend not using a full can of beer vs the one cup required like I did.

I've been kicking that same idea around too. They sure look good, guess I'll follow your lead and give it a try.
 
I got two huge slabs of ribs, too big for my 18 WSM, I might have to copy this cook, beans and all. Looking might fine Dwain, hope to duplicate this tomorrow
 
Dwain that looks real yummy buddy...what kind of CI are you cooking the beans in? I have done Beans in the dutch oven a couple times but I always seem to get a Wierd metallic taste when I cook them that way so I have been using the enameled DO instead but it's a real pain in the *** to clean afterwords!!

I went over this thread with my son. It's official he's going to run one kettle and I the other. We're calling it: The Dwain inspired Ribs & Beans cook. :)

Great plate Dwain! And it has been a long time since I have seen a Crackberry. Did not know they were still in biz.
 
Everything looks great. Beans look spot on, and might actually be able to convince my wife on them if I made them with that recipe.

The ribs look great! Love the "hot and fast". Did you have any issues with temp doing beans at same time? Taking lid off to prep and add ingredients?
