I've been experimenting with cooking at a bit higher temps on my ribs. This evening I did 350*F and they were done in about 3 hrs. Very tender, a nice "crusty" bark. I used Pecan wood for the smoke and it was a definite plus. I also did some "Cowboy Beans" over the fire to serve along side. My G Son rolled out half the pizza dough from earlier and we brushed them with butter, salt and garlic powder. Topped them off with some Parmesan. Overall - a great meal.
