Pulled Beef on the 14.5

I could not resist the clearance price for the 14.5, so I picked one up a few days ago. Today is my first cook! Normally I would cook chicken or sausage fatties for seasoning, but I decided to jump right in with pulled beef.

Sorted through the choice grade chuck roasts at Costco, and found these. Nicely marbled.

Seasoned with salt and Meathead's Big Bad Beef Rub. Used more rub than I normally do--thought I'd experiement a little.

On the 14.5! The 6.5 lbs of meat takes up the whole surface. :D

First cook on the 14.5 is finished. I thought it would be more difficult to maintain temps than on the 18.5, but the little smoker did great. It was slightly more difficult to get dialed in,l but I chalk that up to not being seasoned yet. After I got it stable, it held dead on at 237 for hours, and then at 271 for several more hours. I'm really impressed.


The meat hit the stall right at 165. Put it in the foil pan and covered.

Here is the pulled beef! This is just one of the roasts. I'll be pulling the other and putting it in vacuum sealer then into the freezer.

I'm definitely down with the beef but I'm lost about the yard clippings to the left?

Just kidding and congratulations on your first cook.

I plan to get an 18.5 WSM before Labor Day but I'm kind of sort of scared because it will be used to cook food for company, and they are company that I like and care about a great deal.

Congrats on that inaugural cook Mark. Loved the plated pic also. Looks like that beef turned out great. All you guys getting the 14's are making me think. Unfortunately, don't see the great deals here. Paid full pop for my 22 so will probably keep looking on Craigslist. Keep up those great cooks.

Good stuff, Mark - the pulled beef looks terrific! The way you described your experience with your first 14.5 WSM cook is similar to how things went for me when I first got my 14.5. And since that day, I continue to be amazed at the temperature stability of that little smoker.
 
Congrats on the 14.5, got one last year on clearance for 100.00 from Wally World! The pulled beef looks great.
 
Mark, that 14.5 did an outstanding job on that beef and man are you going to have some awesome sammies.
