Our local Costco now carries whole, and sliced pork bellies.
I cut my 9+ pounder into thirds, two were frozen, one is curing for bacon.
An end trim was apple wood smoked over lump
.
Penzey's (salt free) jerk pork seasoning and salt applied.

Internal at 145 in 1.5 hrs, running 250 on the kettle.

I saw those last weekend and they weren't too expensive. I thought about getting one, but I had no idea how to cook them...........until now :)

OMG, Bob. Wow! I'm drooling here. I'm going to join Costco tomorrow I think. Of course your bacon looks phenomenal. But the rest of the belly is just as great. I actually had a dinner entre about a year ago that was belly and it was fantastic. You've made it look even better.
 
Nice job Bob. We were at our Costco in Kenosha and the pork belly's were $1.98/lb.
