Pepin's Potato Leek Soup and Roti Cornish Hens

# 4 came home from Penn state tonight made her a nice meal. First the Cornish Hens in the brine with salt sugar and the Aromatics in

Leeks cut and cleaned as per Jac and a mix of Shrooms cut up

Sweated until softened, then chicken stock and some water added, then instant potato, salt and pepper, and at the end a little milk added

Hens stuffed with half a ripe orange, dressed with EVOO, then seasoned with Herbs de Provence and on the roti. Towards the end the the drip pans removed and the coal baskets moved to center to crisp up the skin

Ever tell you guys how much I love my OTG, dialed in 350 right away and stayed there for the whole cook

The CEO, otherwise known as the gravy master took the giblets, beef broth, butter and my pan drippings and made something brown and delicious

Wow Bill. I thought that bird was looking at me in that first pic. What a spectacular meal. That soup looks delicious, as does everything else. That orange stuffed in the hens sounds delicious. Will definitely try that. Great job.
 
Great stuff Bill. #4 is a lucky girl. As is the rest of the family that was home for this masterpiece.

That was a awesome cook Bill, #4 is a lucky girl and the rest of the family is lucky to have you and the CEO for parents. That is a very interesting soup will have to try that.
 
Great looking meal Bill! The hens, soup and everything looks fantastic! I haven't tried that soup and will book it soon. I just made 3 qts of chicken stock from the bones of three chickens and soup is next up.

Great looking meal Bill. I love to do Cornish hens on the rotis. We are going to try that soup too. My wife loves potato based soups and the freezer is full of home made chicken stock...
