Pancakes Made With Sourdough Starter

As some of you know my latest adventure is bread making. I have had some success and now that I got the book Flour, Water, Salt, Yeast by Ken Forkish I can attribute my success to dumb luck. Most of what I was doing was bass ackwards to what I should have been doing
Anyway I was keeping my Levain active so I had to feed it every day which required me to dump half of it out to add the new flour and water. I thought that was a waste of good starter so I investigated to see what I could use it for and found a recipe for pancakes using it, so I saved some and gave it a try.
I have to say they are quite good very lite and flavorful. I made the pancakes and Barb cooked up some eggs and some of our homemade breakfast sausage.
Really a great breakfast.

EDIT:

Made waffles with the same basic recipe this morning....They were wonderful, very lite and crispy.

Great idea and great looking breakfast. Could've used that this morning before another day of shoveling.
 
I can't remember the last time I had pancakes. Now I want pancakes. That's a mighty fine plate Rich!
 
Those breakfast plates look excellent Rich & Barb! After making the sourdough version, will regular pancakes
ever be good enough again in the future?
