I use a similar system with my vacuum-sealed foods in the freezer, but I write directly on the top of the bag (the part that will be cut off when opening it). Typically, I use this format: "<Food> - <amount/weight (unless it's obvious)> - <date packed>". For example, I found BSCB for $0.99/lb last weekend, so I stocked up, broke it down and froze it. I've now got about 10 pouches of "ChickBrst (thin) 4/1.5lb 03/19/2016" (this seems to be the ideal size for our family of three - just enough to minimize leftovers), a few pouches of "ChickBrst (thick) 4/2.0lb 03/19/2016" and the bits & pieces left over go into pouches like "ChickBrst (bits) 1.0 lb 03/19/2016" (just right for stuff like stir fries, tacos or quesadillas).
Buying bulk and repackaging like this has really helped us to better manage portions and minimize the amount of leftovers we generate.
