Our Christmas Tri Tip Dinner

It was just me and my wife for our Christmas Dinner. I had planned to do a Standing Rib Roast but that is postponed until this Friday when my Son and family will be over. Went instead with a nice prime tri tip and sided it up with a zucchini squash casserole and some twice baked potatoes. It was about 30 degrees outside but decided to do the TT on my small WSM. Cooked at 250 with pecan for smoke. Took about an hour.

Had quite a bit of prep on the sides so got started on those first. Earlier in the day baked a couple of potatoes for the twice baked later in the evening.



Six medium zucchini in the bottom of 2 qt baking dish.



Some shredded Cheddar.



Added a couple of chopped yellow onions and some pickled Jalapenos. Added a mixture of heavy cream, three eggs and salt and pepper. Topped with second layer of Cheddar.



Put casserole in fridge until later. Scooped the potatoes and built the twice baked for later too.

Seasoned with SYD rub.



I usually start the Minion with about 6 or 7 coals but bumped it up due to the temps and wind.

Things moving pretty fast now. Got the squash casserole on.





Pulled after 1 hour. IT hovering right around 130.



Potatoes on to warm for about 20 minutes. Then pulled.





Squash done.



Sliced.



Plated up.



Well, that's it. Meal was delicious and was a fun way to spend Christmas day and evening. Thank you for looking.

Really nice cook Cliff, you nailed it. Christmas was a pretty cold day as cold days go in kalifornia, you did great.

Someone snipped the tip off the tip of your Tri tip! Gonna have to call that a Tri Blunt!
 
I'll take that plate of food Cliff. WOW!!! Everything looks fantastic and I sure do like the zucchini dish going to have to try that one.
 
Glad to see you did a tri tip on the mini smoker, I'll have to give that a shot on mine. TT came out great!!!!!
