One Long Hot Day Fighting the Butt War

One long hot day! Wanted to do a pork butt for pulled pork sandwiches so I defrosted an 11 pound butt.
Started at 6 am and finally pulled it off at 9:30 pm.
It was 102 out and I ran the 18.5 WSM at 225 with cherry and apple for smoke.Injected with apple juice and Penzeys 3000. Penzeys 3000 for the rub.
It stalled at 155 about 2pm and sat there for three hours, I was just getting ready to foil it and it started going up again. The sucker stalled again at 165 at 6:30 for another hour and a half so I foiled it and it hit 193 at 9:30 and the bone slid right out.
Don’t think I want to do one that big again.
Came out great though.

Great looking pork Rich. The one I did Sunday stalled very similar to yours. It sure can drive you nuts but the payoff is worth it.

Yep, on a big ole butt like that, I'd be going overnight.
 
Great job on the pulled pork Rich. I have never encountered a double stall like that but I can imagine it was frustrating. It looks like it was definitely worth the wait though. I like the way you portion out and shrink wrap it. We waste so much food sometimes. Going to get me one of those machines.
 
The deed was done & looks like you did great.
The high ambient temps probably were helpful to the cook.
I've never cooked one that big. Kudos!!!
 
Great job Rich. Those double-stalls are panic inducing if you're up against the clock, and you have guests coming over.

It's a very comfortable 70f here this morning. But scheduled to jump to a blistering Death Valley............76f in the afternoon. :eek:

I've learned with pork butts, I never plan on having them for dinner the day I cook them always the next day.
Try not to overheat yourself in those blistering temperatures.:cool:
 
Nice job on the pork Rich! We used to live just outside Vegas in Boulder City before moving back to the NW 4 yrs ago. I do not miss those 100+ degree days that's for sure.

This is the weirdest weather we've had in the 15 years we've lived in this area. Were in the mountains and usually a few days of 100 + all summer. So far we've had 17 of 100+ and it's only June!
Crazy! Today will make 18 as it's 103 right now.
 
Fantastic Rich, try to keep cool my friend. My Daughter is in Phoenix this summer doing an Internship with Amazon, she is feeling the heat
