This is something my mother would make for me when I was growing up. They are called pambazo.

Boiled some potatoes, got some chorizo and onion and cooked them. Then mixed them together and smashed to a paste.

Made a hot sauce

Then we get torta bread and brush on guahillos sauce on them and light toast on the CI

Split open and spread on potato and chorizo.

Added our ingredients... Lettuce, crema mexicana,cotija cheese and red hot salsa

mebbe momma will let me have some of it to make a lunch...could replace the potato and use corn instead, day old French bread in place of torta bread...:confused:

Wow, that looks really great Tony, don't know if I could handle the heat but I sure would like to find out!
 
That is something else Tony, you did it again but I'm not sure about the heat. That is one I'd give a try anyway.
 
How could I not approve? That looks great, and I have never seen cottage cheese on any sandwich before.

Again, a VERY nice job, Tony! I would probably have trouble with the heat but I bet I would manage...
