A simple dinner tonight. Taco/nacho style. I know this is not near the real deal but frankly i like it even better. We ate alot of Mex food in cali. Some good some awfull. I think the pulled beef enchiladas i had on the palm springs casino was the worst ever. But got some awesome stuffs in Tusayan(grand canyon) Oliver is now a sucker for refried beans(the ONLY one in the family) A well here is my humble swedish take on nachos/buritos.

Starts with:

Butter/oil in a ci pan:

Once browned a spice mix(santa Maria) was added and then some water.

Now its time for the apple smoke to do its thing...Takes one beer then its done.(the Pan is now indirect)

Looks good aight...If you wanna add cheese do it now.

Served something like this. Cubed up leftovers from the loin put in a pan and reheated fast.

Been really hot here today about 88f but humid as **** Nice to have a meal outside when the sun is on its way down. Have a great one//Daniel & Emilie

I'll take a dozen of each and call a cab for a ride home. Not sure what I'm having for dinner tonight, but I'm sure I'll be disappointed after seeing your cook.
 
That's it. You've inspired me. It's Taco Tuesday at my house tonight!
 
Daniel, can I tell you a secret, there is no right way to make Taco's. Every family has there own style and it usually based on what they have on hand. Yours my friend look fantastic. Oh, love the yard

Daniel those looks authentic enough for me to eat 5 or 6 of them! Emilie's garden looks great too!
 
Your 1st paragraph had my eyes watering- GREAT STUFF!
i hearya on the good/bad foods away from home...
looking at your table and place settings (plated dinner),
you could REPLACE those bad joints in So Cali
Emilie, your garden is a Paradise!!!

And refried beans are AWESOME!

Great cook and beautiful yard! Emelie grows and you cook. Nice! I still think I'm leaning toward Sweden and a BBQ at your house for a dream vac over our west coast! Glad to see your posts again.

John: I skipped the sauces. I was afraid the weight limit on the bags was reashed. And i dident find alot of rubs,but i found 6 different Weber ones that i bought. + 2 larger cans that i love to try.
