Had a hankerin for a old favorite flavor wise

Skinless boneless thighs marinated all day in Mojo Criollo

Quajillo's toasted and then in warm water for a soak for 20 minutes

In the blender and done and then into a pot to simmer for awhile, just enough to make the house smell like heaven

The sides lined up and ready, with some Cilantro and some homemade cocktail sauce for some left over shrimp
