Sunday was a beautiful for some BBQ.
We smoked a beef tongue and seasoned with fiesta brand steak seasoning. Smoked at 275 with hickory chunks. It gets 4 hours of smoke and then wrapped in foil for the next hour or so. At the 5th hour I checked and the skin peeled off with ease. Internal temp was 195 but most important is that the skin peels off easily.

Awesome Tony. You and your little buddy did good. I'd give it a try..... might have to be drunk, really drunk. Not due to the quality of the cook, but I've never eaten tongue and I just have this block. Seriously, I would try it and probably love it. Nice job.

Hey Tony, great too see the unpopular cuts being q'd. That tongue looks good.

Tongue is popular here in the UK. We cook it, let it cool, then slice it thin like ham to eat. Makes great sandwiches too.
 
That would be a new one for me also, sure looks good, but then again everything you guys do looks good!
 
Never had tongue, maybe if I had it without knowing it would be ok. I do say those tacos look delicious though. Keep them coming you two.
 
You're the only person I'd trust to cook me tongue. I don't have a problem with different parts like that. I just don't trust myself to do it right. Looks delicious.
 
Great looking tacos! I wish Tongue would go back down in price, makes excellent pastrami! When if I can find it here its $8.99 pound!

A lot of people say they don't like then why is to so expensive if no one wants it???

When were kids this was a cheap eats for the kids to eat. Meat was served to the grown ups.
