I cooked my first brisket of the year for mother's day.

Creekstone Farm's Prime

After the trim. I left a 1/4 to 1/8 inch of the fat cap.

Seasoned with salt and pepper.

The puppies are very concerned.

I wrapped in butcher paper at about 170. This is after the cook and before the rest.

I had a bit of a crust-tastrophie.
