Mini vs. Eight Pound Butt

Memorial Day we did an 8+lb whole pork butt on the mini. I used a pork rub from the Weber’s Real Grilling book, was very good.

I also injected it with ½ cup each AJ & ACV 1 Tbs of brown sugar and 1 Tbs of Worcestershire. I reserved half for the foil.

Did the minion method and two chunks of pecan for smoke.

Ran the mini at 260-275 started at 7:30am and foiled at the stall at 1pm with the remaining injection mixture.

I started probing at 195 and pulled it at 205 and wrapped it in a heavy towel and let hang out in the microwave until the dinner time.

I have to say this was the best pork butt I’ve done, melt in you mouth , juicy and really had great flavor.

Sides were corn on the bone and home made pasta salad.

Barb also made some old fashion grilled peach pie on the gasser that was outstanding for desert, she will post that.

Total time was over 9 hours and the mini went the whole time without a fuel reload or ash dump. I posted in the mini tread some pictures of the mini this morning. I had enough left over coals to fill both charcoal baskets on the performer for tonight’s dinner.
That thing never ceases to amaze me.

I agree with you Rich, these small smokers are wonderful. I used my Mini-Joe Gold today to do several lbs. of cold smoked cheese using an Amazen smoke generator.

Good job! I have done two 8.0-9.0 lbs. Boston Butts at a time several times in the Mini and the 14.5. They do a FINE job!

Woof. Alright Rich - you and your pulled pig have convinced me. I am going to break down and construct a mini. I have been watching the local CL for and SJS but I can't wait any longer - I am off to order the parts right now...
