Making Bacon With a Slurry This Time

Had a pretty thin slab of pork belly so I decided to try something different and if it didn’t work out no big loss.

Eight days of curing with tender quick with brown sugar and cinnamon.
Made a slurry of brown sugar, pure maple syrup and cinnamon. After air drying in the fridge overnight I covered the slab with the slurry and let it sit for about four hours in the fridge. I let it come up to room temperature while I got the mini ready to go.
Minion start with three chunks of hickory. Temps were 150 -160, when it hit 140 I pulled it and put it in a bag and into a bucket of ice water to stop the cooking.

This is the first time I’ve used Stubbs charcoal and I have to say I’m impressed. I burned far less and had far less ash than kingsford.

Sliced it up the next morning. Fried up a few pieces and it was excellent, best bacon I’ve made so far. Nice sweet maple smoky taste and the cinnamon adds another level of flavor

A big thank you to the bacon master Bob Correll for helping me get started in the making of my own bacon, this was #15. So much better than store bought bacon.

Interesting technique, and the finish product looks great, Rich! May have to give that a whirl the next time around.

Looks very good. Just took some of my last batch out of the freezer yesterday and we killed it between breakfast and lunch. Time to make more...

Gonna have to give that slurry thingy a try.
I'm also thinking about trying some brown sugar and apple pie spice (cinnamon, nutmeg, allspice) on a slab.
Bet Santa would love it! :)
 
Looks great Rich! X2 on the Stubbs, wish they would price it like KBB on sale.

Got pretty close to kbb, Lowes had it on sale for $4.59 for a 14 pound bag at the end of the grilling season. I only got four bags because my shed is full of kbb and smoking woods. Now after trying it I wish I had bought a lot more of it. It's still a little more but worth it from what I can see from my first time using it.
