M1 smoking away on hickory stick wood. 270* Cant see the smoke in the picture but its real light. Just like it needs to be burning sticks.

5 hours later the final product.
Spritzed with apple juice 4 times, no wrapping.

Plated pic ribs are smoked pink clear through & very juicy too.

Do I like burning stick wood? Yes! Was it hard like people say? Not on this unit.
If you understand how to burn lump the last few years. You just use lots more air to keep the wood burning with a open flame.
Had a great time. The fires are holding their own. Long way to go yet.

That is an amazing BBQ / Smoker, I was reading about it from your arrival thread. You could not have cooked those ribs better. Sure the M1 is a mighty fine machine, but I think the pit master played a big part in the success of those ribs

Looks super guud Russ. Now you got a smoker that is up to the standards of the chef.
Glad to here the fires are not at least getting worse. With it fresh in our minds we know it's not an easy thing to go through until they get containment.
