Great looking cook Dwain. I've made short ribs indoors but I want to try it on the grill. Very nice job!
 
Great looking short ribs Dwain, quite inspiring. I have a similar cast iron pot that I use for beans. It has short legs - does yours ? Did you have some sort of plate beneath to allow it to stand in the bottom of the kettle ? Were there any briquettes directly underneath for the searing and saute ?

Yes mine has short legs. I use a disc I removed from the bottom of a visconia pot I used the make the mini with. I use two less briquettes around the bottom edge than I do on top. 10 and 12 usually.
