Low and Slow Wings and Legs

This is the first cook on my new Performer.

Cooked some wings and legs for a couple of hours at 250. Used Salt Lick Rub and a piece of hickory on top of the coals. Came out crispy on the outside and somewhat moist on the inside.
My Niece and I loved em, a little too smokey and spicy for the wife. Next time I'm going to slather some Sweet Baby Rays at the end.

The Salt Lick rub is very spicy. Seemed like more cayenne than sugar. It was on sale so I gave it a try. I think if I would have sauced them with Sweet Baby Ray's they would have been sweet and spicy.
 
Nicely done Pat. I did some drums last weekend, pit at 275 for 1.5 hours. I did not get crispy skin, I got firm skin. Will try 250 for a couples hours and see if I can get crispy skin
