July 4th weekend backyard bbq

The last two years now July 3 has been the big family backyard bbq and today was another great one. I think the stars were the pork belly burnt ends and desserts.
Here are my first ever attempt at pork belly burnt ends.

My wife's 4th of July childhood memory is of waffles and ice cream. My big Belgium Waffle iron is not the right waffler for this job so we ended up picking up this $12 single mini waffle iron at Target, perfect!!! My right hand daughter spend so much time making this stack of waffles.

My wife and oldest daughter picked up some ice cream at our local mom and pop shop after my wife picked my daughter up from her first day of work ever!!!

My mother in law brought brownies over so my right hand daughter made this masterpiece.

Also made some smoked chicken (some of the best I have done in a long while), family favorite beans, pasta salad, and foiled potatoes. Everything was awesome just moved so fast that I didn't get photos of everything.

Burnt ends look great, i see why they were the star.
Waffles and ice cream is new to me. I need to investigate that!

So tell me, what those pork belly burnt ends are like -- I've never had them though I have made bacon and lots of butts. I'm not a fan of loads of fat and cook my bacon crisp. Wouldn't like a mouthful of fat. These look crispy, but looks can be deceiving.

I just posted this description in the 4th of July thread, but it is worth adding here also. The family described them as "like boneless pork rib bits" and my mother in law called them "bbq bacon bits", I thought both those were good enough descriptions. They were soft, chewy, tender, tacky. Like a little fattier version of a meaty pork rib bit. I didn't have a single mouthful of only fat, but there was a fatty-ness to them. Hope that helps...
 
Looks wonderful! But, I do have a real peeve about ”Belgium” waffles. The country is Belgium, the waffles are “Belgian” as in from Belgium.
However, appetite trumps grammar!

I did not recognize that difference. Makes sense -- we call people from Belgium Belgians, so the waffles should be too. By the way, are they really from Belgium?

Edit :Apparently a guy from Brussels, so yes.
 
They are and they are actually nothing like regular waffles, they are made with a pearl sugar in a very very rich batter so they get little crispy sweet spots as well as the fluffy cake part.
IF you are lucky to find someone that knows how to make these correctly, do your level best to befriend them, ply them with whatever it takes to have them make you one now and then. The difference is like tennis and hockey. No comparison whatsoever.
The fact that the terrible grammar is perpetuated in menus and signage to me is insulting. It’s just Wrong! End rant.
 
For those intrigued by the special Belgian waffles, you may have better luck if you search for "Liege Waffles" or "Pearl Sugar Waffles". In case anyone cares, Liege is a city in Belgium.
