July 4th St. Louis Spare ribs Hickory appled smoked

Hi all, it's been awhile since I last posted one of my BBQ cooks, I finally broke out my WSM and did some spare ribs. They were very meaty, and on sale. I did the 3-2-1 method. I used Hickory and Apple wood chunks. Water in pan. Smoker held rock steady at 250F with all vents open. I sprayed with apple juice every hr. The ribs were very tender and tasty. For some reason, I did not get much of a smoke ring on this cook. It still had that BBQ smokey flavor, just not much of a ring. No biggie, the ribs came out great!!!!
