Jim Lampe inspired us to do the roadside chicken recipe he posted. I’ve had the recipe for a while but just never thought to do it.
Knowing you need to baste the chicken about every 5 minutes or so Jim had to be freezing because he couldn’t get away from the grill long enough to warm up! That’s dedication to a cook!
Weather wise for us it was a little windy, but in the mid-60s. So I put my Sally scarf on and went at it.
We did like the recipe said, made the marinade without oil and the basting sauce with oil. Cherry wood was used for the smoke.
Barb made her yam rounds with olive oil and Weber’s Sweet ’N Tangy and were they ever good!
Added a little LO garlic pasta.
I will agree with Jim that this is some of the best chicken we’ve ever had and it will be put into the rotation for sure. Give it a try if you haven’t already, really great stuff.
