Been sick and not feeling like doing much cooking. I was at the store and they had a clearance on Rib Roasts, picked this one up for $1.5 a LBS - said to myself, this is for the new WSM
Three hours at 250
15 minute rest
My plate (and boy is it what the doctor ordered)
Put the ribs back on
1.5 hours later, man were they good
The WSM ran fine, I was most pleased with it. I know the 22" is overkill for a 7LBS roast, but I had to do an inaugural cook, and what better that a rib roast?
