I keep seeing some of the fantastic Mexican dishes that people like Tony R post on this forum and thinking I need to join in on the party, so here's an attempt. Got a skillet browning chorizo.
Quick sear on some veggies while the chimney warms up.
Salsa simmering in another CIS. If only this sort of thing could go from plant to plate in less than an hour year 'round...
Ingredients stacked up on the tortillas.
After a few minutes in the 22.
Plated, with a squeeze of lime and some fresh cilantro. Local restaurant does huevos rancheros with black beans instead of refried beans, I prefer the texture & flavor so emulated it here.
The Mimosa isn't really a Mexican cocktail, but hey it's named for a Mexican flower so that's reason enough for me to fortify my OJ with a splash of champagne!
Kinda messy, but a whole lot of flavors going on right here.
Crop dusting season out here in the cheap seats, always a fun time!
