I keep seeing some of the fantastic Mexican dishes that people like Tony R post on this forum and thinking I need to join in on the party, so here's an attempt. Got a skillet browning chorizo.

Quick sear on some veggies while the chimney warms up.

Plated, with a squeeze of lime and some fresh cilantro. Local restaurant does huevos rancheros with black beans instead of refried beans, I prefer the texture & flavor so emulated it here.

The Mimosa isn't really a Mexican cocktail, but hey it's named for a Mexican flower so that's reason enough for me to fortify my OJ with a splash of champagne!

Excellent cook, Clay. Well executed. That plated pic with the mimosa is a thing of beauty - so inviting!
 
Nice looking breakfast, Clay. Huevos Rancheros is on my to do list in a week or two. Hope it comes out as good as yours. Beautiful pic's.
