Habanero-Raspberry Wings, Jerk Thighs

cooked these on the WSM with no water pan, ~350F for ~35 minutes.

The thighs don't look all that good in the pic but they were!

Good lookin' chicken! That is my chicken cookin' method, too. I LOVE Jerk Chicken! I'm sitting here in front of the computer waiting on supper and you're KILLIN' me!!;)

I used probably 5 oz Marie Sharp's Beware (habanero sauce), and probably just under that amount of Raspberry jam. Then I added a little over a teaspoon of corn starch as it warmed, stirred as it simmered, and took it off the heat before it had simmered for 40 seconds or so.

What's your favorite hot sauce? Have a habanero one or jalapeno?

The one I used isn't a ridiculously hot one but has lots of good flavor (and heat). I'll probably try terriyaki with minced jalapeno soon.
 
This is the stuff I use if I need some heat. This stuff is seriously hot. Has to be used sparingly.
