Grilled cheese sammiches

I got these grill mats for Christmas and have been walking past them since then without using them. A slightly gourmet winter grilled cheese & tomato soup meal seemed like a great way to try them out.

A couple of essential ingredients to what I had in mind- heirloom tomatoes canned from our garden, and cucumber vodka.

Starting out the tomato bisque with garlic, onion, celery, and carrots simmering in chicken broth.

Simplicity- buttered bread, one slice of sharp cheddar and one slice of smoked gouda on each sandwich.

Tomatoes, flour, cream, etc. added to the pot and given stick blender treatment.

A cast-iron skillet might be superior for consistency, but these mats offer a lot more flat area. Think I'll find more uses for them.

For lubrication, a basil cucumber vodka martini.

Oh, and for the finishing touch, homemade jalapeño jelly. I was really surprised how much the charcoal added flavor to these sandwiches with just a few minutes on the grill, it's something I will do again!

Very nice take on a classic comfort meal. The martini and jalapeno jelly both look fantastic, too.
 
Wow Clay - that is some down home comfort food. And a cucumber-basil Martini? That is just SICK dude! Well the deal is my wife loves grilled cheese and tomato soup (her Mom used to make it for her) so I am going to have to step up my game. You have inspired me to raise the bar and grill her a memory...

I can't confess to being a genius mixologist about the cucumber vodka- I didn't know such a thing existed until we were at a bar in a casino on New Year's Eve, and they were running a drink special using the stuff. Have to admit I am hooked- it's going to be really delicious when the weather gets warm enough for Mojitos, Tom Collins, and Gin & Tonics.
 
I just checked on Amazon (as well as the Yoshi web site) and there seems to be a "dozen" different brands all with claims of "the best".

Anyone else have any experience with these mats. Any recommendations will be appreciated. It seems like they MIGHT be practical for a variety of things.

Clay, there is a Gin made by Hendricks... it is infused with rose petals and cucumbers... you gotta check this out.

At First, I Thought, "Gimme A Break!" I love gin martinis and Tonic splashed on Gin, but cucumber & rose petals???

however, ....as you say, "I am hooked"

Hendricks Gin may cost 2 bucks more, but most certainly worth it.
