gai yang (thai style grilled chicken)

been on a bit of an asian kick the last couple weeks, and i have been eyeing this recipe on serious eats for a while.

marinated for 2 days, grilled indirect until 140F, crisped skin for a few minutes over direct side and pulled it bout 146F.

I made your recipe last night, cooking two breasts. They were very good and tasty. I marinated for about 4 hours, cooked over indirect heat until about 140F. Then over high heat to crisp up the skin. I used store bought Thai Sweet Chili Dipping sauce. A great sweet and spicy taste to a chicken breast. I will definitely save this recipe and cook again sometime.
 
Just downloaded the recipe! It's gonna be a beautiful weekend here in PA, I think I'll try the Gai Yang (with the wilted greens as a side) on Saturday. Maybe a pastrami on Sunday, haven't done one in a while. It's always a big hit!
