Fraldinha, Pao De Queijo, Linguiça & Abacaxi

or in other words churrasco flank steak, Brazilian cheese rolls, sausage & pineappleetc.

Sliced a 2 lb flank steak into 3 long pieces & marinated it in chimichurri for a couple or 3 hours.

Cooked some Brazilian cheese rolls in my new to me CL G330.
They probably should have gone another 10 minutes. Could have browned a bit. Am still working on getting the temps calibrated.

Built a hot fire with K Lump & Mesquite chunks in the XL (26er).

Removed the flank steak from the marinade, shook off most of it (threw the rest of it away), gave it a heavy coating of coarse sea salt & skewered it.
Skewered some garlic chicken sausages (store bought). Sliced some fresh pineapple.

About 3 minutes per side gets it medium rare.

While the fraldinha was resting under foil... grilled the sausage & pineapple.

Wouldn't be as good without the chimichurri.

I'm not sure about the authenticity of the Fraldinha - but it sure was good.
After doing some research, I'm of the opinion that there's more than one way to do it.

Another mouth watering cook Robert. Those Brazilian Cheese Rolls look delicious. Did you cook those from scratch?

Yes - cooked from scratch. This is the second time I've made them. The first time they collapsed after removing from the cooker (but they still were yummy). Added a little more tapioca flour & that seems to have fixed that issue.

We like them a lot & have ordered a mini muffin tin to bake them. I think that will help them brown as they won't be so big.
