AFter the cook. Kbb and Pecan. Wrapped at about 160 and this thing stalled forever! Took about 16 hours.

Dustin you and I are on the same path today. I hope mine turns out half as good as yours looks. Plus I am jealous of the price you get brisket for down there! Great pics of the family!
 
That brisket looks amazing.

I'm doing a 6lb brisket today and I sure hope it doesn't take 16 hrs!

I'm doing a high heat smoke at 275-285 on my WSM, smoking now for 4 hrs, then I'll pull, wrap, and back to push thru the stall till 'done' (I'll use temp and tenderness to make sure).
 
Nice brisket, Dustin. Hey when it turns out like that even at 16 hours, it's worth the wait!
