Have never cooked a prime rib before, so why not use the WSM. I picked up a three bone roast from Costco that was 6 1/2 pounds and was prime. I coated it with SPOG. Setup the smoker with water and used the minion method with hickory and oak for smoke. Let it smoke for about 2 1/2 hours until it hit an internal of 105. Then pulled it and put a grate over the bottom section to sear. After searing all sides it registered 118. I then let it rest for 20 minutes while I cooked the sides and made some Au Jus. I should mention that I did catch the drippings from the prime rib and the au jus turned out great with just a slight hint of smoke.
All in all everybody was very happy.
I also threw on a chunk of corned beef to make pastrami.
