Faux Burnt ends

When the wife asks for burnt ends, the wife gets burnt ends! These faux burnt ends have become a regular hit at our house as of late. As I was cubing them up, my wife took one and asked that I not put any bbq sauce on them this time as she thought they were just right without it! I don’t think she could have paid me a nicer compliment!!
4.5 hours @ 275°, with 2 chunks of pecan.

That looks great, Tim! Did you used chuck roasts? Here oddly, chuck winds up being more expensive than brisket.

Some Central Texas restaurants (notably Kreuz's) offer shoulder clod, which is part of the chuck. It's usually the cheapest cut of the massive chuck hunk. Making burnt ends from the clod seems perfectly legal to me, and these look righteous.

They sure are chuck roast. My wife bought a 2 pack at Sam’s last week just for burnt ends.
