Fajita Night!

Aldi had skirt steak for $4.99/lb a while back, so I grabbed a bunch of them for freezing and later use. Pulled a 0.85 lb. one out to make some fajitas.

I cut it into two pieces, salted liberally and set on a rack to come to room temp while I fired up some lump. When it was ready, I slapped them on the bare coals:

Alton Brown recommends (I think) 1 minute per side, but I've found that I prefer the doneness with 1.5 minutes per. And in this case, there was a good amount of fat on the one side (that I should have trimmed off), so I gave that side an extra minute. Here's the steak at the end of the cook:

Wrapped that up tight in some foil for a rest and put the CI skillet onto the coals for the peppers & onions:

Almost forgot the lovely beverage for the cook. I still don't know how to pronounce the brand, but I really like this lager:

Time to eat:

That would normally be enough for two people, but due to transit issues, I walked an extra two miles on my way home from work and was extra hungry. I devoured the whole platter (save some of the peppers & onions) with sour cream, some acceptable but not-nearly-as-good-as-homemade guacamole and white corn tortillas, as shown:

Looks good, I love fajitas! Good price for the meat, I never see it that cheap. My neighbor, who is a Grizzly Adams kinda guy, introduced me to cooking directly on red hot coals a couple years ago. I thought he was nuts, but it works great!

That looks tasty Chad. I really need to try that direct on the coals cook.

It's the only way to go with skirt or flank steak, IMHO. Just be sure to use good lump and blow/brush off the loose ash before putting the meat on. You will get some ash that sticks, but mixed with the juices, it makes a terrifically smokey au jus.

Aldis has a couple "fresh meat" specials every Wednesday and every once in a while, they have a bonus, which is what this was. Their supply is limited, so I buy as much as I can and freeze it. Maybe it's not the same quality as other stores, but it works for me and mine.

Thanks! I'll try to remember that. Someone brought a sampler pack to our house for the holidays and this is the last of the Northwoods Lager from it. Their Snowdrift Vanilla Porter is also quite good, and their Bavarian Dunkel is great. I might get a whole case of this Lager for the next holiday weekend.

Wow that looks delicious Chad. I've never cooked meat right on the coals but it looks like it turned out perfect!

Awesome looking fajitas Chad. I want to try cooking directly on the coals but I've never used lump.
