Dutch Oven Chicken

On Saturday I worked on my next sourdough bake and this Dutch Oven Chicken. Here are the pic's of the chicken and sides.

Chicken thighs and some buttermilk



Soaked chicken in the buttermilk for one hour.



Rolled chicken and coated in seasoning mix. Flour, bread crumbs, paprika, sage, s&p, garlic powder, ground mustard, thyme, ginger and oregano.



Ready for the Dutch Oven.



Browned the chicken in my 12 inch CDO.







Once chicken was browned I drained the oil from the CDO and placed a trivet inside. Reconfigured heat to lid of CDO and baked for one hour.





While chicken was baking, got to work on sides. Baby red potatoes and green beans.

Note to self: time to get the DOs out. Forgot how much fun they are.
 
Good lookin' meal Cliff. It was a revelation when we learned to put coals on the lid of a DO. Makes all the sense.
 
Got to try that one, looks great Cliff. Barb and I are hitting the bread trail again Thursday. We've got the Saturday white/wheat down which helped develop some of the skills and procedures we needed. So next up is the Overnight White.

Great post of a very interesting topic. Yeah, I wish I had been there, too!! That plate looks scrumptious! Great job all 'round!

The Dutch oven is a GREAT piece of equipment around a camp fire, too! In the past I did a LOT of camping and you can really "wow! the natives" with strawberry shortcake and a good buddy of mine did a REALLY great peach cobbler as well as "meat and potatoes". We used to do a lot of family bicycling tours. We would set up at a campground in the area, then do day trips on the bikes (wives, kids, and guys, alike). We ended up getting a large screen tent and would host the whole bunch for a great evening supper complete with dessert, etc for great times around the fire.

Dutch ovens, for those who haven't tried them, are extremely versatile and useful in a wide variety of situations!
