I've got a group of buddies that gets together once a month for "steak night". Tonight was my turn to host, and I decided on "Steak on a Stick", so I picked up some plate ribs. Did a pretty straight forward smoke on these with about 6 hours at 250, seasoned with DP Dizzy Dust. For smoke I used a 50/50 mix of hickory and cherry. Sides were "no-stir" mushroom risotto and a spinach salad (with goat cheese, pomegranate seeds and walnuts.) We had a great time, and the grub was great! Here's a few pics:

First, I made a loaf of sourdough bread, and, I have to thank our own Cliff Bartlett for sending me some of his sourdough starter:

Here are the ribs after some initial trimming:

I'll skip over the seasoned pictures, and get to the meat of the matter (pun intended):

Plated up with the aforementioned risotto and salad:

This was a great meal from beginning to end. I enjoy the time with my friends, and it's great to have a monthly reason for all of us to get together. Truth be told, the whisky and cigars after dinner weren't too shabby either! :)

Grill on!

A meal fit for a king....well, a bunch of kings. Ribs are wonderful Rich. I could't see the risotto and salad picture either but they sounded really good, especially the salad. That bread is a show stopper. What gorgeous color. We both know that your knowledge, skill and technique have far more to do with that loaf than my starter, but thank you.

Thanks, all! It was a fun cook, and the no-stir risotto is a real winner!

Here's another try at the plated pic:

Rich, all I can say is that is one awesome meal. Your friends must have enjoyed that to no end.

pretty spectacular, Rich!
Your very first photo of the sourdough looks absolutely OUTSTANDING!!
then, your dinner plate (further down the comment ladder) looks PERFECT!

Thank you, Jim. The sun just happened to hit the loaf while it was cooling, so I got a bit of a more artistic shot than usual.

I highly recommend that risotto recipe. I rarely make risotto since I don't like to continually tend to it. Nice to just have to stir a couple of times.
