Cornell Chicken

[John Solak]

Chicken thighs marinating in Cornell marinade for 28 hours. I only wanted to marinate it for 4 hours and cook it yesterday but something came up and I couldn't cook it. Cooked it over red oak wood using my Santa Maria pit.

Plated with some white rice seasoned with soy sauce and some mixed veggies.

It actually turned out better than I thought. Very flavorful. I need to make it again and only do a 4 hour marinade to know for sure.
