Picked up some nice inside Skirt Steak and went primeval on it with the tenderizer, orange slices, Cilantro, garlic, red onion all in the bag with half a cup of OJ.Chef Merito's Spice all over. In the fridge for a few hours

Meat now coming to room temp, started on the Guac, all the suspects lined up. Diced Chili Peppers from our garden in the Molcahete first and ground down nice (they turned out to have nice heat) then garlic, then Avocado. All the rest in next and used a spoon to mix thoroughly including Kosher and Lime Juice. This is what I make to top a taco more than just for chips as there is no need to add anything else besides the Carne Asada and Cheese.

Is not the Sportsman the best Hibachi on the planet? You killed that cook Bill, your Carne Asada is amazing!!! I love Sol beer, it and Modelo are my favorite. (not counting PBR & Coors) :)
