Cliff set a high bar with his beautiful standing rib that he posted earlier, so I had to get my game face on for this one!
I pulled the last "cut off" from the Xmas standing rib out of the freezer yesterday so it could take its time thawing out. My wife and kids are off at a concert tonight, so I had a bit of gluttony on the agenda.......
"Steak" (or is it a roast) is thawed and into the water bath with my Anova sous vide controller @ 124:
After a long (2 hr) bath, I seasoned up both sides with a generous grind of salt, and heavy dusting of Dizzy Pig Raising the Steaks:
Tonight's weapon of choice:
After the first flip:
....and off the grill after 2:30 minutes on each side:
Here's the money shot.....just how I like it!
OMG this is so good! A crazy, gluttonous indulgence to be sure, but SO worth the treadmill and bike time that I'll have to put in to counteract it!!!
