I picked up a couple Pork Bellies from the Hanson Family last weekend (the day after Madison Bumgarner Bobblehead night) - Go Giants
I quickly put one in the Tender Quick, as I wanted to get my 7-8 day cure going. I should have looked harder at the meat, I would have noticed that there is a membrane and I didn't remove it until after the cure. That probably hindered the cure
I set up my snake
And put the now membraneless Belly on
It took about two hours at about 175 to reach 150ish
I pulled it off and did a rapid cool in the fridge. I barely used any of my snake
Sliced it about 10:30PM (I did say bucket list, lol)
Got out the CI and had my first homemade bacon. It's wonderful!!!
If you can get your hands on a Pork Belly, you gotta do this. It's one for the ages. If you're in the Bay Area, kalifornia - go see the Hanson Family, tell them Chuck sent you
