I picked up a couple Pork Bellies from the Hanson Family last weekend (the day after Madison Bumgarner Bobblehead night) - Go Giants

I quickly put one in the Tender Quick, as I wanted to get my 7-8 day cure going. I should have looked harder at the meat, I would have noticed that there is a membrane and I didn't remove it until after the cure. That probably hindered the cure

I set up my snake

And put the now membraneless Belly on

It took about two hours at about 175 to reach 150ish

I pulled it off and did a rapid cool in the fridge. I barely used any of my snake

Sliced it about 10:30PM (I did say bucket list, lol)

Got out the CI and had my first homemade bacon. It's wonderful!!!

If you can get your hands on a Pork Belly, you gotta do this. It's one for the ages. If you're in the Bay Area, kalifornia - go see the Hanson Family, tell them Chuck sent you
 
Great looking bacon Chuck, now that thats scratched off your bucket list, whats up next?
 
Looks great Chuck. There are so many ways you can make bacon, We've done brown sugar, brown sugar and black pepper, maple syrup, sriracha and seasoned pepper, dizzy pig and bone dust, etc. All of it has been great. Try making Canadian bacon that's one you'll never buy in the store again too.
 
That's some great looking bacon, Chuck. You have to try brown sugar & black pepper in the cure next time.
 
That looks almost as good as mine!! ;) Nicely done my friend! Very hard to go back to store bought bacon when you've had home made!
Speaking of which, I have a belly in the freezer that needs to be cured and smoked before the end of the month. Going to my sister's 60th in NH the end of the month and I promised to make bacon!
 
And let me say Chuck its good to see you back in action! Been a while! Even if you have poor taste in baseball teams.

Chuck, just like everyone who has made bacon said you won't buy it in the story's again. You have to try different rubs like Rich said, just have fun with it. Home made bacon is out of this world for sure. Chuck you did outstanding and enjoy.

One tip, if you would like more smoke on your next one, is to start your snake single row, then part way around go to a double row.
This will help keep it from hitting 150 too fast.
