Have been wanting to cook Birria de Res for quite some time & yesterday was the date.

Hmmmm..... might have known.
Was planning on doing this outside, at least smoke the chuckie for a while. However, it rained all day - about 4 1/2" total.
So it was done inside. Don't have an "Indoor Weber" like Rich & Barb's, so a big skillet & the range had to suffice.
Good deal on chuckie got me going:
Rounded up the rest of the team.
Put the meat, onion, garlic head, cumin (2 tbs), bay leaves, salt (1 tbs) & beef broth in the skillet. Added water to cover & let it simmer until the meat was fork tender.
Removed the garlic, onion, bay leaves & shredded the meat.
Put the meat back in the pot, added the guajillio sauce, brought things to a boil, & reduced to a simmer for 15 minutes.
Served with chopped green onions, radish slices & cilantro.
Time to Eat!
Makes a great breakfast! Next time.... might make the sauce from scratch using a couple three different chilies.
Oh yeah.... here's what 4 1/2" of rain in 18 hours & some wind will do:
