Rain on the way yesterday evening, so I did a hurry up cook.
Was shooting for crisp skin, so I dusted the bird with cornstarch, then with Oakridge Game Bird & Chicken rub.

Veed the baskets to get the thighs cooking first.
Lump on bottom, and Stubb's briqs on top.

The south end was browning nicely after 1/2 hr. so I brought the baskets north.

After an hour total, only 140 internal temp, so she went in the oven to finish up.

Nice start of the week meal!

Hope everyone had a great Easter!

Thanks for the kind comments!

Not sure if the cornstarch helped that much or or not since my fire was so hot.
Pretty crispy skin, and I didn't notice any off flavor from the cornstarch.

Thanks Bob, I've read that salting and putting cornstarch on the chicken will help get crispy skin, I have not tried it myself, yet.

How is the Oakridge Chicken Rub?
I really haven't found anything except Penzey's Northwood's or Old World that is knockout great on chicken...
Bob, Your Bird Is BEAUTIFUL! I'll bet is tasted

That skin could be the perfect example what we're all aiming for each time! Thanks for sharing, Bob.
