Beef shorties!

I have been watching a little Franklin BBQ on PBS which promted me to cook up some short beef chuck ribs! Real simple....yellow mustard, kosher salt and black pepper....hung out in the fridge for about 3 hours!

Gotta have tater salad with ribs!!

Got the shorties on the WSM at about 250...no water in the pan...bit of hickory smoke!

Then we sat around, watched a bit of football and drank a few beers!! Hit the ribs with apple juice and vinegar about every hour for six hours!

Pulled them at 6 hours...bout 196...
.
They look terrible but they had great bark, super tender and moist!
Served up witb beans and tater salad!! Good stuff!

Sorry the plated pic got a little dark but I was so hungry!!

Glad to see those short ribs being treated with respect. I wouldnt put anything more than what you did (mustard, salt, and pepper). Yours look delicious! I prefer to cook mine in racks rather than pieced out.
